Ingredients
- 1 cup Strong Coffee or Espresso, cooled
- 3 tbsp Marsala Wine or Rum (optional)
- 24 Ladyfingers (Savoiardi)
- 3 large Egg Yolks
- 1/2 cup Granulated Sugar
- 8 oz Mascarpone Cheese, room temp
- 1 cup Heavy Cream
- Cocoa Powder for dusting

Whisk egg yolks and sugar over a double boiler until pale and thick (sabayon). Let cool.

Fold mascarpone into the egg mixture.

Whip heavy cream to stiff peaks. Fold into mascarpone mixture.

Mix coffee and liquor in a shallow bowl.

Dip ladyfingers quickly into coffee (don't soak too long).

Layer half the ladyfingers in an 8x8 dish.

Spread half the cream mixture on top.

Repeat with remaining ladyfingers and cream.
