Classic Thai Green Curry
A fragrant and spicy Thai curry made with green curry paste, coconut milk, and tender chicken, served over jasmine rice.

Ingredients
- 400g chicken breast, sliced
- 2 tbsp vegetable oil
- 4 tbsp green curry paste
- 400ml coconut milk
- 1 cup bamboo shoots, sliced
- 1 red bell pepper, sliced
- 2 tbsp fish sauce
- 1 tbsp palm sugar or brown sugar
- 1 cup Thai basil leaves
- 4 kaffir lime leaves
- Steamed jasmine rice, for serving

Heat the vegetable oil in a large pot over medium heat.

Add the green curry paste and fry for 1-2 minutes until fragrant.

Pour in half of the coconut milk and cook until the oil separates slightly.

Add the chicken slices and cook until they turn white.

Add the remaining coconut milk, bamboo shoots, and red bell pepper.

Simmer for 10-15 minutes until vegetables are tender.

Stir in fish sauce and sugar. Adjust seasoning to taste.

Tear in the kaffir lime leaves and stir.

Remove from heat and stir in the Thai basil leaves.

Serve hot over steamed jasmine rice.
